Ingredients
- 1 Bread (large loaf)
- Oil (for frying)
- 1/2 kg Boiled, mashed potato
- 2 Tablespoons Vinegar
- Chinese-style masala (prepared as described in the Spring Rolls recipe)
- Dried bread crumbs (as needed)
- 3 Tablespoons Maida (all-purpose flour) (mixed with a little water into a paste)
Instructions
- Trim the crusts off the bread slices and cut each into four small squares. Prepare the masala as described in the Spring Rolls recipe.
- Boil the potato, peel, and mash it smooth while still hot, with no lumps. Mix this mashed potato with the vegetable masala, along with a little vinegar, salt, and pepper powder.
- Spread a little of the masala onto a bread square, brush with the maida paste, dust with bread crumbs, and press down firmly by hand. Refrigerate for 1/2 hour.
- Heat oil in a pan and place 4 or 5 bread squares in, masala-side down. Flip gently once golden and cook the other side, then remove and drain the oil well.
- Serve hot with tomato sauce. Note: rather than a deep, curved pan, a flat-bottomed sauce pan or omelette pan with about an inch of hot oil makes frying the bread easier and gives better results.
