Ingredients
- 2 cup Shelled, dried groundnuts
- 1 clove Garlic
- Salt, chili powder (as needed)
- Oil (for frying)
Instructions
- Heat half a vessel-full of water in a wide pot.
- When the water comes to a boil, crush the garlic and add it in, then add the dried groundnuts. Once it comes to a boil again, turn off the stove and cover for 5 minutes.
- Drain the water, fold a cloth over, put the groundnuts inside, cover with the cloth, and rub with your palm -- the skins will all come off.
- Remove the skins, put the groundnuts on a plate, and let them cool for 2 minutes.
- Pour oil half full into a pan and once hot, place a wire frying basket with an iron or steel handle into it, add a handful of groundnuts, and fry until golden.
- Fry all the groundnuts and put them in a draining bowl; once the oil has drained and while still hot, spread on a sheet of paper, sprinkle with salt and chili powder, mix, and once cooled, store in a jar (can be kept and used for up to a week).
- Note: frying this way makes the groundnuts tasty, and gives them an attractive glossy sheen.
