Ingredients

  • 12 slices Bread
  • 1/4 cup Milk
  • as needed Salt
  • 1/2 Teaspoon Sugar
  • 1 cup Thick curd
  • 1/2 Teaspoon Chili powder
  • 2 Tablespoons Sweet chutney (given in the Pani Puri recipe's notes)
  • 1 1/2 Teaspoons Roasted cumin powder
  • 1 Tablespoon Chopped coriander leaves
  • 1/2 Teaspoon Black salt (kala namak)

Instructions

  1. Trim the crusts off the bread slices.
  2. Tear the bread, sprinkle in a little milk, and knead into a soft dough (don't overwork it).
  3. Shape this dough into small, lemon-sized balls, flatten like a vadai, and arrange with space between them in the center of a wide plate.
  4. Whisk the thick curd lightly (it should not be sour), and mix in a little salt and sugar.
  5. Just before serving, pour this curd over the bread vadais.
  6. Sprinkle black salt powder, salt, cumin powder, and chili powder over it. Garnish with coriander leaves, drizzle a little sweet chutney on top, and serve.
  7. Note: if guests drop in unexpectedly, this vadai can be put together in just a few minutes -- and it tastes great too.
