Ingredients

  • 1 cup Maida (all-purpose flour) (heaped)
  • 1/4 cup Corn flour
  • 1/4 Teaspoon Baking powder
  • 2 Teaspoons Oil
  • 1/2 Teaspoon Salt
  • Ice water (as needed to knead the dough)
  • Masala filling (prepared as in the Spring Rolls recipe)
  • Corn flour (mixed with a little water into a paste, for sealing)
  • Oil (as needed, for frying)

Instructions

  1. Sift the maida, corn flour, baking powder, and salt together twice. Rub in the oil well, then sprinkle in ice water and knead into a stiff dough.
  2. Cover and rest briefly, then beat and knead well until relaxed. Divide the dough in two and roll each into a thin rectangle. Cut into 4-inch squares.
  3. Mix corn flour, or a little maida, with water into a paste. Place a gooseberry-sized portion of the masala in the center of each cut square.
  4. Place a small round disc of dough on top and seal with the corn flour paste so the masala doesn't leak out. Gather the four corners of the square up to the center, then deep-fry in hot oil until golden.
  5. Serve hot with tomato sauce. Alternative method: these can be shaped in various ways -- purse-shaped, cap-shaped, or however you prefer, then fried the same way.
