Ingredients
- Large raw mango (peeled and cut into thin flat pieces)
- 4 Onion (sliced)
- 2 Green chilli
- Curry leaves
- 1 ladle Oil
- Mustard seeds (for tempering)
- as needed Salt
- as needed Sugar or grated jaggery
Instructions
- Pick good, large mangoes. Wash and clean them, peel, and cut into large, thin flat pieces. Slice the onion, green chilli, and curry leaves.
- Heat a ladle of oil in a pan, temper the mustard seeds, add the onion, chilli, and curry leaves, and once they turn reddish, add the mango pieces. Saute briefly, add a little water, mix in salt, and let it cook.
- Once well cooked, mash it a little with the ladle, add the required sugar or grated jaggery, and remove from heat once it thickens. The sugar must be added only after the mango has cooked down to a mash.
- This dish balances spicy, sour, sweet, and salty flavours all together.
