Ingredients
- 1½ azhakku Raw rice
- 1 azhakku Parboiled rice
- 50 grams Urad dal
- 2 spoons Fenugreek seeds
- 4 kg Jaggery
- as needed Baking soda
- as needed Cardamom
- அரை டம்ளர் Tender coconut water (optional)
Instructions
- Soak the rice, urad dal, and fenugreek seeds for 5 hours and grind to a smooth batter.
- Before finishing the grinding, add the jaggery and cardamom and grind them in.
- Let the batter ferment for a few hours. Adding half a glass of tender coconut water improves the flavour.
- Just before cooking, mix a pinch of baking soda into the batter. Grease the appam pan with oil and set it on the stove.
- Thin the batter to be slightly more watery than dosa batter, pour it into the pan, hold the pan with both hands, and swirl it around. Once the batter has coated the inside of the pan, cover it. On moderate heat, the appam will cook through and puff up.
