Ingredients

  • 1/4 kg Potato
  • 2 Tablespoons Maida (all-purpose flour)
  • 2 Tablespoons Rice flour
  • Oil (as needed, for frying)
  • 1/4 Teaspoon Fennel seeds (to grind)
  • 6 cloves Garlic (to grind)
  • 1 inch piece Ginger (to grind)
  • 8 Dried red chili (to grind)
  • 1 1/2 Tablespoons Roasted gram (pottukadalai) (to grind)
  • as needed Salt (to grind)

Instructions

  1. Pick potatoes of similar size and pressure-cook them whole. Once cooled, peel and slice into 1/4-inch-thick rounds.
  2. Grind the fennel, garlic, ginger, dried red chili, roasted gram, and salt with very little water into a smooth paste. Mix the maida and rice flour into this paste.
  3. Coat both sides of each potato round thinly with this paste and let sit for 1/2 hour.
  4. Deep-fry in hot oil and serve hot. (This can also be shallow-fried on both sides on a griddle with a little oil.)
  5. Alternative method: slice similarly sized brinjal into rounds, coat with the same masala, and fry the same way.
