Ingredients

  • 1/2 kg Potato
  • 2 Tablespoons Corn flour or maida
  • as needed Salt
  • 1 Teaspoon Lemon juice

Instructions

  1. Peel the potatoes and grate them on a large-holed steel grater (do not put them in water).
  2. Fold a cloth into two layers, place the grated potato inside, wrap it up, and press firmly to blot out excess moisture.
  3. Mix a little lemon juice, salt, and corn flour into the grated potato.
  4. Spread a little of the grated potato evenly inside a small stainless steel mesh strainer. Place a second ladle that fits snugly inside it, and lower both into hot oil.
  5. After a little while, remove the inner ladle, loosen the edges of the potato basket with a spoon, and drop it directly into the oil. Flip and fry until golden brown.
  6. Fry the rest of the grated potato into baskets the same way (these keep for a few days in an airtight container). Fill with vegetable salad or sundal to serve.
  7. Note: if fried without salt, the baskets can instead be filled with a sweet such as milk khoya and served that way.
