Ingredients

  • 2 Onion
  • 3 Carrot
  • 100 Grams Beans
  • 1/4 kg Potato
  • 1 Raw banana
  • 1 Beetroot (small)
  • 2 Tablespoons Chopped coriander leaves
  • Oil (for cooking)
  • 3 Tablespoons Gram flour (besan)
  • 3 Tablespoons Dried bread crumbs
  • 1 Tablespoon Cream (skimmed from boiled milk)
  • as needed Salt
  • 4 cloves Garlic (to grind)
  • 1/2 inch piece Ginger (to grind)
  • 1 Teaspoon Poppy seeds (to grind)
  • 4 Green chili (to grind)
  • 1/2 Teaspoon Cumin (to grind)
  • 1/4 Teaspoon Fennel seeds (to grind)
  • 2 Cardamom (to grind)
  • 1/2 Teaspoon Pepper (to grind)
  • 2 Teaspoons Vinegar (to grind)
  • Cinnamon (small piece, to grind)
  • 2 Cloves (to grind)

Instructions

  1. Steam the carrot, beetroot, and chopped beans in a pressure cooker. Boil the potato in water in a separate bowl inside the cooker. Steam the raw banana, skin on, on the top rack.
  2. Peel and grate the onion. Once cooked, peel and mash the potato and banana thoroughly. Grate the cooked whole carrot and beetroot.
  3. Heat a little oil, saute the grated onion until reddish, and add the ground paste. Stir well until the raw smell is gone.
  4. Add the cooked vegetables and saute until the moisture dries up, then add salt and sugar. Remove from heat and, once cooled, mix in the gram flour and dried bread crumbs.
  5. Dip the bread pieces in water, squeeze out thoroughly, and knead into the mixture. Shape small lemon-sized balls from this masala.
  6. Shape these balls into thin, evenly sized oblong logs, like gulab jamun. Deep-fry in hot oil until golden. Serve with mint chutney, sweet chutney, and tomato sauce.
  7. Cut onion into thin strips, toss with salt, pepper powder, and lemon juice, and let it sit covered for an hour. Serve this alongside the fried kababs.
  8. Note: if you have an oven, these can be molded onto skewers and grilled until golden, then brushed with butter to serve; or they can be threaded onto a knitting needle and deep-fried. To grind the poppy seeds in a mixer, first soak them in boiling-hot water for 10 minutes, drain, grind them alone first, then add the rest of the ingredients and grind together.
