Ingredients

  • 2 litres Full-cream (Aavin) milk
  • 20 grams Cashew nuts
  • a small amount Saffron
  • 300 grams Sugar
  • 20 grams Pistachios
  • a small amount Edible camphor (pachai karpooram)

Instructions

  1. Simmer the milk in a heavy vessel over low heat. Let it boil and form a layer of cream (malai) on top, and push it to the side. Keep repeating this as the cream keeps forming.
  2. Once the milk has reduced, add the sugar and stir it in, scrape off the cream stuck to the sides of the vessel with a ladle, mix it back in and stir well, bring to one boil, then mix in the flavouring ingredients and remove from heat.
  3. Once cooled, chill it in the fridge — it tastes best served cold.
