Ingredients

  • 1/2 cup Maida (all-purpose flour)
  • 1/2 cup Semolina (rava)
  • 1/2 cup Rice flour
  • 1/2 cup Wheat flour
  • 1 cup Finely chopped onion
  • 3 Tablespoons Chopped coriander and curry leaves
  • 1 Tablespoon Green chili paste
  • as needed Salt
  • Oil (as needed, for frying)

Instructions

  1. Combine the flours and semolina together in a wide bowl.
  2. Add the chili paste, salt, onion, coriander, and curry leaves, and mix well.
  3. Heat 3 tablespoons of oil and mix it in.
  4. Divide the dough into 5 or 6 portions.
  5. Sprinkle a little water onto one portion and knead into a stiff dough. Shape lemon-sized balls and flatten each into a thin vadai on a sheet of polythene or a banana leaf.
  6. Carefully lift each one and deep-fry in oil until reddish-brown. Serve.
  7. Once one mixed portion is used up, sprinkle water into the next and knead. If all the dough is mixed together at once, the vadai will brown too quickly.
  8. Note: this vadai can be kept for up to a week and still eaten. Store it in an airtight container to keep it nice and crisp.
