Ingredients
- Toor dal (well cooked)
- 1 Vegetable (your choice - tomato, brinjal, drumstick, cauliflower stem, avarakkai, or radish)
- 1 Onion
- Tamarind (extract, dissolved in water)
- as needed Sambar powder
- as needed Salt
- Mustard seeds, urad dal, curry leaves (for tempering)
- Coriander leaves (chopped)
- Jaggery (a small piece, optional)
Instructions
- Cook the toor dal well. Saute the chosen vegetable and the onion, then add the tamarind extract, sambar powder, and salt, and let it boil.
- Once well cooked, add the cooked dal, then temper with mustard seeds, urad dal, and curry leaves. Add chopped coriander leaves.
- Sambar can be made this same way with many different vegetables. You can use whichever you prefer among tomato, brinjal, drumstick, cauliflower stem, avarakkai, or radish.
- You can reduce the tamarind and add raw mango or lemon juice instead. Adding a small piece of jaggery to the sambar makes it taste better.
