Ingredients

  • Maida (all-purpose flour) (prepare the laminated dough exactly as in the Vegetable Puffs recipe)
  • Butter (to grease the cone moulds)
  • Masala filling (prepared as in the Vegetable Puffs recipe)
  • Maida (all-purpose flour) (for the fried-cone alternative method)
  • Semolina, baking powder, salt, butter (a little of each, for the fried-cone alternative method)
  • Oil (for the fried-cone alternative method)

Instructions

  1. Prepare the laminated maida dough exactly as described in the Vegetable Puffs recipe. Roll it out thin like a chapati and cut into 1/2-inch-wide ribbons.
  2. Take metal cone-shaped moulds, grease them lightly with butter, and wind the dough ribbons around each one, overlapping slightly so they hold together.
  3. Bake in the oven until golden on top. Brush a little melted butter on top, unmould, fill with the prepared masala, and serve.
  4. Alternative method -- Fried Cones: Mix the maida with a little semolina, baking powder, salt, and butter, then sprinkle in water little by little and knead into a stiff dough. Knead well, roll out thin like a chapati, cut into ribbons as described above, wind around the cone moulds, and deep-fry in hot oil. The cones will slip off the moulds naturally while frying. Fry until golden, fill with the masala, and serve.
