Ingredients

  • 2 cup Maida (all-purpose flour) (heaped)
  • 4 Teaspoons Oil
  • 1/2 Teaspoon Salt
  • 3/4 Teaspoon Dried yeast
  • 1/2 cup Milk
  • Water (as needed)
  • 2 Onion (for topping)
  • 2 Capsicum (for topping)
  • 2 Tomato (for topping)
  • 150 Grams Cooking cheese
  • 3 Tablespoons Tomato sauce
  • Salt, pepper powder (as needed)
  • 1 Tablespoon Butter

Instructions

  1. Add sugar and yeast to lukewarm milk and cover for 15 minutes. Sift the maida, add salt and oil, and mix well in a wide bowl.
  2. Make a well in the center of the flour, pour in the milk-yeast mixture, and knead the flour lightly with your fingertips, a little at a time. Sprinkle in lukewarm water as needed and knead into a soft dough (like chapati dough) -- don't knead it forcefully.
  3. Oil the inside of a wide vessel, place the dough in it leaving room for it to rise, and cover with a lid. After 5 or 6 hours, the dough will have doubled in size.
  4. Divide the risen dough into large-orange-sized portions without re-kneading it. Dust with maida and roll each into a 1/4-inch-thick disc, like a chapati.
  5. Prick the surface with a fork, place on a baking tray, and bake in a preheated oven for 5 to 7 minutes at 275°C. Remove before the top starts to brown.
  6. Spread a little butter and a thin layer of tomato sauce over the base. Slice the onion, tomato, and capsicum into thin rounds and arrange them on top.
  7. Sprinkle salt and pepper powder over the toppings, then scatter grated cheese on top. Grill or toast in a hot oven until the cheese melts. Serve immediately.
  8. Alternative method (six topping ideas): (1) Mix tomato sauce with chili sauce, '8 to 8' sauce, and Worcestershire sauce as a spread. (2) Saute fennel, chopped onion, and tomato in a little oil, mix in salt, chili powder, and garam masala powder, and use this as a chutney-style topping. (3) Soak red rajma (kidney beans) for 8 hours, pressure-cook for 20 minutes, and drain. Saute onion in oil, add garam masala powder, coriander powder, chili powder, salt, and tomato sauce, then finally mix in the beans and remove from heat -- spread this over the pizza, top with cheese, and bake. (4) Saute and grind spinach; add salt, pepper powder, and masala powder, and bring to a boil. Spread tomato sauce on the pizza base, spread this spinach mixture over it, sprinkle crumbled paneer, top with grated cheese, and bake. (5) Cut onion, capsicum, spring onion, carrot, and cabbage into thin strips, saute in oil with ajinomoto, then add salt, white pepper powder, and soy sauce and remove from heat -- spread this over the pizza, top with cheese, and bake. (6) A ready-made pizza naan can also be buttered on both sides and toasted like a chapati on a griddle, then served alongside a vegetable masala.
  9. Note: half-baked pizza bases are available ready-made in stores -- these can be bought and topped with different vegetables as you like before baking. You can also make the pizza base at home as described above, wrap it well in a plastic bag, and keep it refrigerated for up to 5 days, using it whenever needed.
