Ingredients
- 1 cup Maida (all-purpose flour)
- 1/4 cup Rice flour
- 1 Tablespoon Semolina (rava)
- 1/4 cup Finely chopped onion
- 1 Tablespoon Finely chopped green chili
- 2 Tablespoons Finely chopped coriander and curry leaves
- 2 pinches Cooking soda
- as needed Salt
- 1 cup Sour, thick curd
- Oil (as needed, for frying)
Instructions
- Mix the flours and semolina into the curd and let it soak with salt for 5 or 6 hours.
- Mix in the onion, chili, coriander, curry leaves, and cooking soda just before frying.
- Heat oil in a pan, and with wet hands, pinch off portions of the batter into balls and drop them into the oil to fry.
- Serve hot with coconut chutney.
- Note: the amount of curd needed can vary with the flour -- don't add water. Use only sour curd.
- Alternative method: (1) equal parts semolina, maida, and rice flour can also be mixed to make the bonda. (2) The bonda can also be made using just semolina soaked in curd. (3) Mixing finely chopped greens or vegetables into this same batter makes for a tastier bonda.
