Ingredients

  • 1 cup Maida (all-purpose flour)
  • 1/2 cup Grated cheese
  • 1 Tablespoon Chopped cashew nuts
  • 2 Tablespoons Finely chopped coriander and curry leaves
  • as needed Salt
  • 1 Tablespoon Finely chopped green chili
  • Water (as needed to knead the batter)
  • Oil (as needed, for frying)

Instructions

  1. Mix the sifted maida with the finely grated cheese and the rest of the listed ingredients, add water, and knead into a lump-free bonda batter (mix it lightly; don't knead forcefully).
  2. As soon as the batter is mixed, roll it into small balls and drop them into hot oil to fry. Serve hot immediately.
  3. Alternative method -- Bread Cheese Bonda: tear bread into large pieces and pulse in a mixer into crumbs. Mix this with milk, cheese, a little maida, salt, baking powder, chopped onion, green chili, and coriander leaves, and use it to make the bonda.
  4. Note: use Cheddar-style cooking cheese for this if possible. The batter won't turn out well if left standing too long -- use it right away.
